Garlic is a member of the onion, leek, and chive family. Black garlic is produced when garlic cloves are matured under specific conditions of heat and moisture, which then breaks down the enzymes that give garlic its strong flavor and smell.
Black garlic has twice the nutrients of regular white garlic. It is sweeter in taste and does not leave an unpleasant aftertaste or odor. A substance called S-allylcysteine is found only in black garlic. S-allylcysteine and other compounds found in black garlic are known as active phytonutrients.
